Writing Basedon Reading andListening

Directions: For this task, you will read a passage about an academic topic and you will listen to a lecture about the same topic. You may take notes while you read and listen.

Then you will write a response to a question that asks you about the relationship between the lecture you heard and the reading passage. Try to answer the question as completely as possible using information from the reading passage and the lecture. The question does not ask you to express your personal opinion. You may refer to the reading passage again when you write. You may use your notes to help you answer the question.

Typically, an effective response will be 150 to 225 words. Your response will be judged on the quality of your writing and on the completeness and accuracy of the content.

You should allow 3 minutes to read the passage. Then listento the lecture. Then allow 20 minutes to plan and write your response.

Although history has left us scare material evidence of the first grain domestication of mankind, there is enough to prove that our ancestors had been searching for ways to plant wild wheat for consistent food supply. Three important discoveries may have resulted in the introduction of bread as the first food made fromgrain.

First, ancient people discovered that wheat could be ground into paste. At the beginning, they probably had attempted to chew it raw. Undoubtedly wheat must have been too hard to swallow that way. As time went by, they gradually found out that by crushing it between stones they would not take so much trouble to eat and digest wheat any more. Thus, the origin of the drier wheat flour we consume today could be traced.

The next breakthrough was the method of baking. Obviously, except fire, no technology is demanded to bake the simplest bread. According to the discovery of the ancient people, after loaves of wheat paste were baked into bread, they could be preserved for a longer period of time than raw seeds. Besides, the nutritional value of wheat could also be better kept in baked bread.

The third discovery is related with fermentation. Ancient people noticed that when the wheat paste was placed in the open, yeast spores from the air would begin fermenting the wheat. This natural process allowed bubbles to form in the paste, which meant that the baked bread would be lighter in texture and easier to eat.

Based on several discoveries, the writer advocates that bread is the very first grain food ever made by humans.However, an alternative hypothesis has recently been raised, alleging that beer, rather than bread, should be the most primitive grain food. Let's take a closer look at this issue.

First, grinding was not the only way to make wheat easier to eat. When kept in moist conditions, it would naturally start sprouting. With young plant splitting the hard seed shell in half, the sprouted wheat was then sweetened and softened, and they also possessed higher nutritional value. In order to discover the usefulness of sprouted wheat, people only had to leave it in the open air. All this probably happened before they found out the method to grind wheat.

Second, the process of fermentation would turn grain into beer. In fact, as soon as wheat was stored, it might begin to ferment because of the water and yeasts in the air. That is to say, after the wheat sprouted, it would have already started to form bubbles, a typical phenomenon of fermentation. People were likely to notice such a distinctchange and experiment by tasting it. Consequently, the first beer was discovered.

Finally, just suppose that our ancestors were already crushing wheat to paste, the paste would soon begin to ferment with bubbles. Was it possible for ancient people to come up with the idea of using fire before eating it? I fear not. We are surely accustomed to cooking our food today. However, in the prehistoric period, the bright idea of improving food by applying fire was a bit incredible.

The speaker raises doubts on the writer's deduction that bread is the most primitive grain food. According to the lecture, the ancestor of grain food should be beer. This judgment is established on a series of counter evidence.First, the article bases its inference on the discovery that wheat would become easier to eat after being smashed into paste, while the lecture argues that the same purpose could be achieved by preserving wheat in a wet place and letting it sprout. Then it was natural for people to leave the sprouted wheat in the open air other than to grind it. This contradicts the assumption in the passage.

Second, the author advocates that people might have begun to bake the wheat after crushing it. However, as is rebutted by the speaker, the fermenting process occurred right after sprouting. In other words, beer was likely to be produced before bread, which objects to what the passage suggests.

Finally, the lecture challenges the writer's supposition that fermentation guided people to bake the paste.Obviously, it was impossible for them to think out the clever method of cooking the paste on fire at once. Thus, the origin of grain food must differ from the conclusion drawn by the writer.
